In a 2022 Japanese explainer on the beef bowl chains, the most-liked comment is one line: the steady one, Yoshinoya, is my favourite (210 likes). Read the top 200 comments of 1,420 and a division of labour shows up, stated flatly by one diner: Yoshinoya for the beef bowl itself, Sukiya for toppings, Matsuya for set meals, Nakau for oyakodon (26 likes). A former Sukiya crew member says the seasoning there assumes you will add a topping, and that plain, Yoshinoya wins (167 likes). Then the twist: a group of friends ran a blind tasting with the containers hidden and Matsuya came first (122 likes). Plenty of Japanese diners also admit the real tiebreaker is which branch is nearest.

I learned what a beef bowl tastes like at Yoshinoya, so for me beef bowl equals Yoshinoya. The Yoshinoya taste feels like a different thing entirely from the other shops. Beef bowls that aren't Yoshinoya taste like something you could make at home.

I used to work part time at Sukiya, and my impression was that the seasoning on the Sukiya beef bowl assumes you're adding a topping. It only becomes the complete thing once you top it! On the plain taste alone, Yoshinoya. That said, the pork miso soup is too good, so I like Matsuya 😆 I'm out in the countryside, so even the branch that finally opened is far away and I can't just go 😂

A while back some friends and I hid the containers and did a taste test of Yoshinoya, Sukiya and Matsuya, and I was surprised that Matsuya was the most popular.

Best value has to be Matsuya. The dressings come in a good range, which helps when you've got rice left over, and the egg on the negitama beef bowl is a soft-boiled one, which is great.
コスパ最強は松屋かな。ドレッシングの種類も充実してるから米だけ余った時に助かるし、ネギ玉牛丼の卵が温玉でうまい。
Yoshinoya definitely uses the better meat. But the one I personally find tastiest is Matsuya. The pickled ginger especially is delicious.

Tasty or not tasty matters, but with small kids in tow Sukiya is the easiest to use. Which means you mostly use Sukiya, and as the kids grow up, beef bowl chain equals Sukiya gets stamped into them. Clever strategy lol

I work part time at Sukiya. I do feel bad that at busy times we keep you waiting about 20 minutes, but two or three of us can't keep the place turning. Even with four it's barely 10 minutes. Takeout ordered in the shop and the drive-through are especially awkward. The person plating does the plating, but the lids and packing get done out front while you're also working the floor, so it's a hassle. With the drive-through in particular, it's only "you can pick it up at the drive-through", it isn't a finished delivery system like McDonald's.
すき家でバイトしてますが、混雑時は提供まで20分くらい待たせちゃうのは申し訳ないと思ってはいますが、2-3人じゃ周りませんね。4人でもギリ10分くらい。特に店内テイクアウト・ドライブスルーは厄介です。盛り付けは作る人ですが蓋してして梱包はフロア作業もやりつつ前でやってますので手間ですね。ドライブスルーは特に「ドライブスルーで受け取れます」ってだけでマックみたいに完成された提供システムとして成立してないんですよね・・・。お弁当屋さんでも注文してからは10-15分待ったりはしてると思うのでコレ見ていただいた方だけでもその感覚でドライブスルーご利用していただけるとありがたいです。
I've got no palate and they all taste good to me, so I go to whichever Sukiya is nearest. Ranking beef bowls by taste when there's no big difference between them is impressive.

These days there's a Sukiya however far into the countryside you go, so I've got used to the Sukiya taste and even Yoshinoya feels slightly off to me now.

I'm a former Yoshinoya franchise employee, and on sales we get thrashed by Sukiya. After that we started copying whatever Sukiya did. Yoshinoya was better in the days when it was only the beef bowl. I wanted it to stay the one place that pushed the beef bowl and nothing else. A beef bowl and pickles is plenty.

Rather than the taste, I used to go to Matsuya a lot because you buy a ticket first and the miso soup comes with it. When you pay afterwards and it's busy, the staff don't come and you can't leave.
味よりも、食券先払いで味噌汁ついてくるから松屋によく行ってた。後払いは、混んでいて店員がなかなか来ないと帰れない。
For takeout, the nice thing about Matsuya is that you can have the beef and the rice separate. With anything where sauce goes on rice, I feel it tastes better poured on fresh.

Yoshinoya doesn't have much of a menu, but they raise the standard of it every year. Limited-time isn't the same as one-off. As far as the beef bowl goes, when you want a beef bowl any of them will do.
