Ask Fukuoka locals to name their ramen shop and the comment section turns into a ballot box: 1,852 comments of shop names, where the second most-liked reply (1,705 likes) is about the shop nobody named — Ichiran, the tonkotsu chain tourists queue for. Locals insist it tastes fine; it's just too expensive for something they eat every week, and tourist-famous ShinShin goes unmentioned too. The most-liked comment of all (2,166 likes) is "the Umakatchan my mom made" — instant ramen, because in Fukuoka tonkotsu is daily food, not a destination.
